Ingredients

1 can black beans, rinsed and drained

2 cups oats

1 cup breadcrumbs

1 cup spinach or kale

2 carrots, chopped

1 onion, chopped

1 cup mushrooms, chopped

1 tbsp. ketchup

1 tbsp. yellow mustard or spicy

2 tbsp. cumin

2 tbsp. chili powder

1 tbsp. oregano

1 tbsp. nutritional yeast

2 tsp. black pepper

Directions

  1. In a food processor add all ingredients except oats and breadcrumbs.
  2. Blend together until well combined. If it is still chunky that is okay!
  3. Add bean and veggie mixture to a bowl and stir in oats and breadcrumbs. Add more if not sticking together to form patties.
  4. Place burgers on a baking sheet with parchment.
  5. Bake at 425 for 10 minutes then flip and cook for 15 more minutes, or until golden on each side
  6. Serve up however you please, bun, condiments, go to town!
  7. Enjoy!
