Ingredients

1 bag of petite red potatoes (cut into 1/4 pieces)

Juice from 2 lemons

4 garlic cloves (minced)

1/4 cup fresh cilantro (chopped)

1 tsp sea salt

1 tsp black pepper

Directions

Prepare a baking dish with parchment paper. 

Place your chopped potatoes in a large mixing bowl along with all other ingredients above. 

Mix well and place potatoes in your baking dish. Cook for 20 minutes, stir and then cook again for 25 minutes. Remember to always tweak the spices any way you want!

Preheat: 400
