2 medium carrots

1 yellow onion

2 tbsp garlic

1/2 cup nutritional yeast

salt & black pepper

1 tbsp smoked paprika

1 tbsp cumin

2 tsp basil

2 tbsp oregano

1 can chickpeas

2 cups bread crumbs

1 cup oats

1/2 cup water


Preheat oven to 400

Saute your carrots, onion and garlic until translucent. Add in nutritional yeast and cook for a few minutes. Add in other spices and mix together completely. Blend chickpeas in a food processor or blender. Add mashed chickpeas in with carrot/onion mixture. Taste and season as needed. Add breadcrumbs and oats. If the mixture is still wet and not staying together you can add more oats and breadcrumbs, or try using a flax egg! Once you have your mixture to the right consistency, scoop out small patties and place on a baking sheet. Bake chickpea nuggets for 15-20 minutes or until crispy brown.
