1 box ziti pasta, cooked to al dente

1 Jar of Pasta Sauce

1 block tofu, drained

1/2 can white beans, drained or 1/2 cup cashews, soaked

1 cup nutritional yeast

2 tbsp. fresh oregano

2 tbsp. fresh basil

2 tbsp. fresh chives

1/2 cup spinach

2 tsp. onion powder

2 tsp. garlic powder

2 tsp. black pepper

2 tsp. sea salt

1 tsp. paprika

1/4 cup vegetable broth or water


  1. Add beans or cashews, vegetable broth and spices to a blender and blend until creamy.
  2. Add tofu to a bowl and crumble with your hands.
  3. Add cheese in with the tofu. Then add all fresh herbs. Season tofu cheese as needed.
  4. Mix pasta in with cheese and herbs and stir in spinach. Add tomato sauce and season with salt, pepper, and nutritional yeast.
  5. Bake at 350 for 10-15 minutes.
